Cold idlies from the fridge aren't exactly appetizing on their own, but their spongy texture makes them perfect for absorbing new flavors!


1. Idly Upma

The classic. Crumble the leftover idlies into a coarse powder. Sauté mustard seeds, urad dal, onions, green chilies, and a pinch of turmeric in oil. Toss in the crumbled idlies and stir until hot. It's a brand new breakfast!


2. Fried Masala Idly

Cut the idlies into bite-sized cubes. Deep fry or pan-fry them until crispy. Toss them in a pan with some onions, capsicum, and a spoonful of Schezwan sauce or Pav Bhaji masala for an amazing Indo-Chinese or street-style snack.


3. Idly Manchurian

Similar to the fried idly, but tossed in a rich, garlicky soy-based Manchurian gravy. It's a fantastic evening snack that kids absolutely devour.
