If you love soft textures but want a change from idly, Set Dosa is the answer.


The Batter Secret

While you can make it with regular batter, traditional Set Dosa batter often includes a small amount of Poha (flattened rice) soaked and ground along with the rice. This yields an unbelievably spongy texture.


The Cooking Method

Unlike regular dosas which are spread thin, Set Dosas are poured thick like a pancake. They are cooked on one side with a lid on top to trap the steam, resulting in a porous, soft top perfect for soaking up spicy vegetable sagu.
