A French crepe relies on refined wheat flour, milk, eggs, and butter. It is heavy and rich. A dosa relies entirely on rice and lentils, making it vegan and dairy-free (unless cooked in ghee).
The Process
Crepe batter is mixed and used immediately. Dosa batter requires a 12-16 hour process of soaking, grinding, and natural fermentation, giving it a complex, tangy depth of flavor that a standard crepe simply does not possess.
