Preserving the Magic
Our batter contains absolutely zero preservatives. It is a live, actively fermenting product. To keep it tasting perfectly fresh and sweet for days, proper storage is essential.
1. The Refrigerator is Mandatory
As soon as you purchase our batter, it must go into the fridge. Cold temperatures slow down the fermentation process, preventing the batter from turning excessively sour.
2. Don't Leave it Out
When making breakfast, take out only the amount of batter you need into a separate bowl. Immediately return the main container to the fridge. Letting the entire batch sit at room temperature for an hour will accelerate souring.
3. Keep it Sealed
Always keep the container tightly closed. This prevents the batter from absorbing other odors in your fridge and keeps the surface from drying out.
4. What If It Gets Too Sour?
If your batter has been in the fridge for 4-5 days and has gotten a bit too sour for idlies, don't throw it away! Sour batter makes the most incredibly crispy and flavorful dosas. You can also use it to make delicious *Paniyaram* (fried batter balls) with onions and chilies.
