Spreading dosa batter is a skill that takes a little bit of practice. Here are the pro-tips to help you master it.
The Tawa Temperature
Your pan should be hot, but not smoking. A simple trick is to sprinkle a few drops of water; if they sizzle and disappear, the pan is ready.
The Circular Motion
Start from the center and move outwards in a continuous, gentle spiral. Don't press too hard! Let the weight of the ladle do the work.
The Secret Trick
If the tawa gets too hot, the batter will stick to the ladle. Wipe the pan with a sliced onion or a damp cloth between dosas to keep the temperature even.
