A great dosa deserves a flawless chutney.
1. Using Old Coconut
Desiccated or old coconut ruins the texture. Always use fresh, moist grated coconut.
2. Over-grinding
Coconut chutney shouldn't be a liquid puree. It needs a slight coarse texture. Pulse it; don't blend it continuously.
3. Too Much Water
Add water a spoonful at a time. It's a dip, not a soup!
4. Skipping the Roasted Chana Dal
Roasted chana dal (Pottukadalai) is what binds the water and coconut together and gives the chutney a creamy consistency.
5. Burning the Tadka
Mustard seeds should splutter, not burn. If your oil smokes, it's too hot and will give the chutney a bitter aftertaste.
