Making soft idlies is an art, but it's an art grounded in simple science. If your idlies are coming out dense or hard, here are the crucial steps to fix them.


1. The Right Batter Consistency

Idly batter needs to be thicker than dosa batter. If it's too watery, the idlies will become flat and dense. Our Chaithram Foods batter comes perfectly formulated for idlies—just don't add water!


2. Don't Over-mix!

Once the batter is fermented and airy, do not stir it vigorously. Gently fold it once or twice just to incorporate the salt. Over-mixing knocks out the precious carbon dioxide bubbles that make the idlies fluffy.


3. The Steaming Sweet Spot

Always ensure the water in your steamer is actively boiling *before* you place the idly plates inside. Steam them on medium-high heat for exactly 10-12 minutes. Over-steaming makes them rubbery.


4. The Rest Period

Don't demold them immediately! Take the plates out of the steamer and let them rest for 2-3 minutes. This allows the starches to set, preventing them from breaking or sticking to the plate.
