When you look at a healthy batch of Chaithram Foods batter, you'll see a slightly domed surface filled with tiny pockets of air.


The Yeast at Work

Wild yeasts from the air and the grains consume the natural sugars in the rice. As they digest these sugars, they release lactic acid (which provides the sour flavor) and Carbon Dioxide.


The Urad Dal's Role

The sticky proteins in the Urad dal trap this Carbon Dioxide, causing the entire mixture to rise and become aerated. This biological magic is what makes our food so incredibly light and digestible.
