Kuzhi Paniyaram (also known as Paddu) is a brilliant dish made using slightly sour dosa batter.


The Equipment

You need a special Paniyaram pan (a heavy cast iron skillet with hemispherical indentations).


The Recipe

Take your Chaithram Foods batter. Add finely chopped onions, green chilies, coriander leaves, and a tempering of mustard seeds. Pour a little oil into the indentations of the hot pan, fill them with batter, and cook until golden brown on both sides. Crunchy on the outside, fluffy on the inside!
